Sourdough Bread

Description

A traditional sourdough bread recipe using a natural starter. This bread has a tangy flavor and chewy texture.

Ingredients

  • 200g active sourdough starter
  • 500g bread flour
  • 350ml water
  • 10g salt
  • Rice flour for dusting

Method

1. Mix starter with water until dissolved. 2. Add flour and salt, mix until shaggy dough forms. 3. Let rest for 30 minutes (autolyse). 4. Perform stretch and fold every 30 minutes for 2 hours. 5. Let dough rise at room temperature for 4-6 hours. 6. Shape dough into a round loaf. 7. Place in floured banneton, seam side up. 8. Refrigerate overnight (8-12 hours). 9. Preheat oven to 250°C with Dutch oven inside. 10. Score dough and bake covered for 20 minutes. 11. Remove lid and bake for 20 more minutes.

Tips

Maintain your starter by feeding it regularly with equal parts flour and water.
