Tiramisu

Description

Classic Italian tiramisu with layers of coffee-soaked ladyfingers and creamy mascarpone filling.

Ingredients

  • 6 egg yolks
  • 150g sugar
  • 500g mascarpone cheese
  • 300ml heavy cream
  • 200ml strong coffee, cooled
  • 2 tbsp coffee liqueur (optional)
  • 24 ladyfinger cookies
  • Cocoa powder for dusting
  • Dark chocolate for garnish

Method

1. Beat egg yolks and sugar until pale and thick. 2. Add mascarpone and beat until smooth. 3. Whip heavy cream to soft peaks. 4. Fold whipped cream into mascarpone mixture. 5. Mix coffee with liqueur if using. 6. Dip ladyfingers in coffee mixture. 7. Arrange half the ladyfingers in a 9x13 dish. 8. Spread half the mascarpone mixture over ladyfingers. 9. Repeat with remaining ladyfingers and mascarpone. 10. Cover and refrigerate for at least 4 hours. 11. Dust with cocoa powder before serving. 12. Garnish with chocolate shavings.

Tips

Use room temperature mascarpone for easier mixing. Don't over-soak the ladyfingers.
